Low fat Butter Chicken // recipe

Low fat butter chicken image

Serves 5

4 Chicken breasts, cubed
120ml low fat milk
10ml lemon juice
70g tomato paste (1 small tin)
+- 1 tsp crushed garlic
+- 1 tsp crushed ginger
2 tsp ground coriander
2 tsp cumin
1/2 tsp salt
2 tsp chilli powder
1 large onion
10ml canola oil
4 tsp cornflour
2 tsp water
1/2 cup plain low fat yoghurt

Mix lemon juice, milk, tomato paste, garlic, ginger and spices. Add chicken and let it marinade for 15 minutes. Dice onion and saute in canola oil. Add marinated chicken and cook until tender. Mix cornflour with the water and add to yoghurt. Add yoghurt mixture to chicken and simmer to thicken the curry sauce.
Serve with basmati rice and fresh coriander.
