Sweet Potato and Brownies are not words that I would have thought I’d be saying in the same sentence. Unless, of course, the brownies were as dessert after the sweet potato. But you know what? They go together SO WELL!

Whether you prefer to eat sugar, gluten, grain or dairy free foods, you need a recipe to bake for a friend or you just feel like experimenting, these sweet potato and date brownies are delicious! The dates give a gentle natural sweetness and they have a surprisingly good texture for a brownie with absolutely no flour or other grain. Give them a try and let me know what you think.

Chocolate Coated Pretzels // DIY

One of my favourite treats has always been chocolate coated pretzels. I somehow fool myself into thinking it’s a healthier option (and well, chocolate). Shop bought ones always leave me feeling disappointed though (because well, not enough chocolate). My obvious solution is always to make my own homemade ones and you can too!

Chocolate cake with whipped cream cheese icing // Recipe

I really like cake stands. Like, really. I don’t have that many, but I also don’t have much storage space in the kitchen. Urgh! Anyway, Michael said I could get ONE more, so it had to be a good one! I found this cute little one at Mr Price for a steal and just had to get it (along with smaller 18cm  cake tins to fit it..) Finally finding the time to bake a cake, I decided on a chocolate cake with a whipped cream and cream cheese icing. Delicious!

Cream Cheese Icing // recipe

Delicious Cream Cheese Icing Recipe
On Monday I decided to try a cream cheese icing since we had some cream cheese in the fridge. I had also tried a new chocolate cupcake recipe. They came out nice, but not amazing. So, I decided that I’d just share the Icing recipe so long. It was really easy and has a soft cream cheese taste. It also made a nice quantity, enough for 10 BIG cupcakes. If you need more it would be very easy to double!

Ingredients

60g cream cheese
30g butter, softened
1/2 tsp vanilla essence
3/4 cups icing sugar

Instructions

Beat together the cream cheese, butter and vanilla essence. Once smooth add the icing sugar a little at a time. Voila!
